Owners plan to revamp business model

Three Twigs Bakery's last day of operations will be Dec. 24.

Three Twigs Bakery has operated out of several locations over the past 10 years, and in 2022 owners Tim and Emily Lewis combined it with Biscuits + Brunch and The Salted Lemon – Market & Creamery so that all three businesses were operating under one roof as Three Twigs & Co. But now the location at 2661 Chatham Road will be closing while the owners take a break and reevaluate the business model.

In a Nov. 19 post on the Three Twigs & Co. Facebook page, Emily Lewis announced that the business would not be renewing its five-year lease and said Dec. 24 will be the last day of operations.

“We have officially decided to use January (what is normally a slow month anyways) to take a much-needed break,” she said, noting that she is expecting the couple’s fourth child later this month. “To embrace being a new family of six and to give us some time to truly reevaluate how we desire to operate as a small business.”

In the post, she detailed the struggles of balancing hiring more staff to help out versus having increased overhead costs, all while she and Tim have had to juggle their growing family with the daily demands of the business.

“We don’t believe the Lord would bless us with this business just so we wouldn’t have time for our family or for our church. We want to change the way of small business for us. And if leaving a space we love for something smaller and more affordable is how we do that, then so be it.” Lewis said.

Three Twigs Bakery initially shared space with Custom Cup downtown, but quickly outgrew that and moved into a retail location at 1370 Toronto Road in 2019 after Free Press Coffee closed. Biscuits + Brunch opened the following year at corner of Chatham Road and Iles Avenue, initially offering curbside-only service due to the pandemic.

When Lewis heard that the adjacent business, CherryBerry Springfield, was not going to reopen even after the stay-at-home order was lifted, she decided to expand and reuse much of the existing equipment. The Salted Lemon – Market & Creamery opened in 2020 as well.

The following year, Three Twigs Bakery relocated to 3421 Freedom Drive in Parkway Pointe after Pie’s the Limit closed. But in September 2022, the ceiling in the kitchen at Three Twigs Bakery collapsed, causing the kitchen to flood, and the business joined the other two at the Chatham Road location.

While Emily Lewis said she doesn’t have a new location or even a timeline for reopening, she assured loyal customers that Three Twigs & Co. will return in some form.

“This is not goodbye. It’s see you later. We are not walking away. We are running toward something greater,” she said. “…our hope is that our community continues to support and love us through this season of raising a family. Until one day, if it’s in God’s plan, we GO BIG again!”
