Crumbl Cookies is coming to Springfield. The bakery with a devoted following has opened more than 800 locations in the U.S. and Canada since the first store launched in Utah in 2017.
Springfield franchisees Matt and Angie Hanzel also operate two locations in Peoria. The couple moved to Peoria two years ago from Utah to open the first Crumbl Cookies in central Illinois, a location in East Peoria, followed by one on Sterling Avenue in Peoria that opened in December 2022. Another franchisee operates a Crumbl Cookies in Bloomington.
The Hanzeles have signed a lease for the space at 3429 Freedom Dr. in the Parkway Pointe shopping center. It was occupied by Three Twigs Bakery & Bistro until September of last year when the business relocated to a space on Chatham Road where owner Emily Lewis already had two other businesses.
Were excited to get Springfield online, said Matt Hanzel, noting that Crumbl locations have an open-concept kitchen. When you come into the store, youll be able to see the cookies being mixed, balled and baked. Its a multi-sensory experience all the sights and smells, he said.
One of the other unique characteristics of Crumbl is the rotating menu that features six cookies each week. Warm chocolate chip cookies and chilled sugar cookies are staples, but the other four flavors vary each week. Hanzel said they are announced on the companys website Sunday evening, and devoted customers try the new flavors on Monday, posting reviews online and generating a strong social media following. There are close to 300 cookies that are in rotation, he said.
Hanzel said he is currently working with an architect to finalize plans for the Springfield location so that renovations can get underway.
The supply chain for our specialty equipment is the biggest unknown in terms of setting an opening date, he said. If everything goes according to plan, we are hopeful we can get the store open by the end of the year.
