After operating the Cookie Dough Factory for the past year at 214 S. Sixth St. in downtown Springfield, owner Sasha Brinson is switching her business model. The space will now be home to 6 St. Café, which already has signage promoting “breakfast, lunch and cocktails,” and Brinson said she hopes to be open within the next week or two.

“I wanted to do something that wasn’t seasonal,” Brinson said, explaining the shift to a restaurant format. She said the café will be open from 7 a.m.-3 p.m. and serve breakfast and lunch items, plus bloody marys, mimosas and other types of cocktails.
