Truckin Good Food launched a little less than a year ago and owner Nick Boucher is now preparing to expand to a second food truck, thanks to a partnership with Slauterhouse Brewing Co. in Auburn.
Boucher started the business in October 2021 working part-time with one employee while also working as the kitchen manager at Main Gate Bar & Grill. By March of this year, he was working at the business full-time and said, “It’s been craziness ever since.”
A grand opening is planned for this weekend, Sept. 17-18. “The response has been amazing, and we decided to turn the soft opening into a two-day event to try to accommodate everyone who has expressed an interest in coming out,” Boucher said.
While his original food trailer specializes in horseshoes and homemade-style foods, Boucher said the Auburn location will be more of a restaurant-style food truck. “We’ll have specialty burgers, sandwiches, build your own salads and wraps, and even a 10-ounce New York strip. We’re also incorporating Slauterhouse’s homemade bourbons and beers into our food,” he said.
Boucher said he had attended various events on the square in Auburn with his current food truck and heard that Slauterhouse Brewing had a vacant food truck they were looking for someone to take over. The new food truck, Truckin Good Food powered by Slauterhouse, will be stationary, and Boucher hopes to transition to a brick-and-mortar location within a year or two.
For now, he’s focused on combining the drinking atmosphere at Slauterhouse Brewing with the opportunity for customers to also enjoy good food.
“I don’t think either one of us could be more excited right now,” Boucher said of the new partnership.
